It’s all thanks to emulsifiers and freezing point depression, two incredible concepts in chemistry. Emulsifiers help blend the fats and water in ice cream, preventing them from separating and ensuring a consistent texture. Meanwhile, adding sugar lowers the freezing point of the water in the mixture, which prevents it from becoming rock solid and keeps the ice cream soft enough to scoop. Here’s something to think about: Did you know that the type of sugar or emulsifier used can actually change the texture and melting time of ice cream?
