From retina color signals especially go to lateral geniculate nucleus in thalamus and then to visual cortex, the major pathway in the primary visual cortex (area 17) and then distribute to a number of more specialized processing centers in the visual cortex. I think color signals are analyzed in the cortex in conjuction with signals about other image attributes (orientation, depth) rather than in a specialized pathway. I am not sure about the details.
