Hey so my professor did this example in class and drew one of the products, but he didn't mention the leaving group product that results. I have drawn the product I think that would result from the leaving group below. I don't know if it's correct.

Yep, that's correct. I would forget the 3H2O you have drawn above the arrow, though. You don't have water participating formally in the reaction. It's fine to write NaOH(aq), or to just indicate the concentration (e.g. 2M NaOH).
