Mushrooms, onion, and bacon make my kiddo smile, ergo my own lips turn upward from that combo, too

A good mature cheddar and spring onion, a combo that works equally well in scrambled egg on toast, both of which are best using a goose egg; thanks for my upcoming sleepless night waiting for breakfast, :rolleyes: especially since the geese have started laying.

I like to use a blue cheese occasionally (so it melts into little islands) . My mother always put the omelette under the grill at the end.

I always add milk or a little water to the eggs to make the omelette lighter. 

Smoked salmon is very good, blue cheese cherry tomatoes and garlic comes in a close second. After this adding just bacon bits or fish flakes or crushed and chopped garlic or chopped onions or grated potatoes makes for a bit of variation.
