I am preparing a project paper about the scene in the movie The Martian about growing potatoes on Mars. Can potatoes be 
grown on Mars, and if so, what kind of process is followed?

As I recall, this is all explained in some detail in the book. The whole point of that book was to work out in realistic detail what would be possible in the circumstances.  Can you not get hold of a copy to read the relevant section?

IMHO, you should start with potato seedlings, 1) in soil, 2) hydroponics. You should first learn what it takes to produce potatoes on Earth to gain knowledge.
