One example of a natural polymer that is ethanol soluble and water insoluble is cellulose acetate. Cellulose acetate is derived from cellulose, a natural polymer found in plants. Through chemical modification, hydroxyl groups in the cellulose molecule are replaced with acetate groups. This alteration makes cellulose acetate soluble in organic solvents like ethanol but insoluble in water.
