I was wondering what if there was a man that could live forever. Would he evolve?

no. evolution works over generations of a species, not on an individual.

Not necessarily. Evolution can happen within a second, such as an instantaneous event that kills off a certain subset of individuals in a species and changes their allele frequencies.
