Well I couldn't find a true flourescence spectrum of [math]\beta[/math]-carotene, but this UV-vis spectrum shows that there is some absorbance in the near UV. Assuming a typical stokes shift for linear conjugated poly-enes; there should be some fluorescence in the "violet-blue-green" area of the spectrum. UV-vis: beta carotene However I don't know anything about the quantum yield for carotenes, so i don't know if the fluorescence will be intense enough to be visible.
