Which scanning probe microscopy technique to use?

Hi guys,

I'm new to scanning probe microscopy. For my high school science fair project, I'd like to image a polysaccharide gel at a molecular level - not individual molecules, but say an area containing 50 polymers. What microscopy technique would be the most suitable?
