I found a small tutorial here http://www.eng.utah.edu/~jnguyen/ecg/ecg_index.html which lists some materials to use with a small circuit board but am unsure where to begin.

Didn't realise that. Had a quick skim. I don't really know enough about the specific application to comment. Seems reasonable, though.
