smhjn17 Posted August 22, 2015 Author Posted August 22, 2015 So what happens to it chemically on heating ?
John Cuthber Posted August 22, 2015 Posted August 22, 2015 At somewhere around 225 C it will melt. It will also decompose on heating to give a mixture of products that I doubt anyone has ever fully analysed. Why do you ask?
smhjn17 Posted August 23, 2015 Author Posted August 23, 2015 Just wanted know if proline content in food would decrease on heating the food ... So probably the decrease wont be too much
John Cuthber Posted August 23, 2015 Posted August 23, 2015 For the temperatures involved in cooking I suspect the change would be to small to measure.
