Tamarin-Tambourin Posted November 28, 2015 Posted November 28, 2015 Hello! I was reading about an experiment about how chopped up potatoes release more catalase from their cells when placed in a boiling tube containing hydrogen peroxide than a lump of potato. Why is this?
TheGeckomancer Posted November 28, 2015 Posted November 28, 2015 Not a chemistry expert but it makes sense that it would be surface area. And unchopped potatoe only exposes the skin, chemical reactions will happen through it but the more surface of the potatoe that the peroxide has exposure to, the faster it can react.
